For the sweetest cup

Damaring Kalpika is the 2017 Indonesian AeroPress champion.

This particular recipe he brews at his coffee roastery (@koffiesome) in Yogyakarta using a honey processed bean from Gayo, North Sumatra. He personally works with the coffee farmers during the whole process to get the sweetness out of the beans.

Refined from his last WAC championship method, this new brewing recipe is aiming for a sweet and clean cup with bright acidity.

Use double filter.

This recipe includes a 20% bypass at the end to keep the coffee:water ratio at 1:10

Coffee:

24g
Medium
Coffee with nice sweet notes

Water:

92°C / 197°F
240mL

Equipment:

  1. Pre-wet your double paper filter and warm your cup
  2. Pour 60g water and stir gently 15-20 times to :30.
  3. Pour 180g water in a circular motion and stir thoroughly for 10 seconds.
  4. Put the cap on and wait until :60.
  5. Flip the AeroPress to a preheat cup.
  6. Press slowly for 1 minute.
  7. Add more water to the coffee to make the final coffee:water ratio 1:10. (This basically means adding in the weight of water absorbed by the coffee grounds, which is typically 2x the weight of coffee used, in this case 48g).
  8. Stir well and enjoy!
