Stephen Houston is like royalty in the Irish coffee world - he has previously been the brewers cup champion and is the current Irish AeroPress champion (2019).

Stephen is the head roaster at Bailies Coffee in Belfast and we are lucky enough for him to share the recipe he used in the 2019 World AeroPress championship finals.

32 clicks on a comandante
Washed Ecuador (or any Central American)

Water:

84°C / 183°F
200mL

  1. Rinse two filter papers.
  2. Start timer and pour 100g water in 30seconds.
  3. Stir well for 20seconds.
  4. Put filter cap on by 1:05.
  5. Slow press to 1:45.
  6. Add 50g of 84c water and 50g room temp water.
  7. Stir well and serve.
